Resumo

The objective of this study was to evaluate the characteristics of the carcass of confined lambs fed with sorghum silage associated with the papaya capsule. The work was carried out at the Experimental Nucleus for Small Ruminants of the Federal Institute of Education, Science and Technology of Rio Grande do Norte - Campus Apodi. Twenty-four male, non-castrated and crossbred sheep of the Dorper (½) and Santa Inês (½) breeds were used, with an average initial weight of 15 kg ± 0.5 distributed in four levels (0; 33,5%; 66,5% and 100%) of the papaya capsule associated with sorghum in the silage. The experiment lasted 63 days, with 14 days of adaptation and 49 days of collection. At the end of the experiment, the animals were slaughtered at the Abattoir Frigorifico Industrial de Mossoró with an average body weight of 25.72 kg and the consumption of dry matter, total weight gain, daily weight gain, daily weight of fasting animals, hot carcass weight , cold carcass weight, hot carcass yield, cold carcass yield, weight loss on cooling, pH after 45 minutes of reduction and 24 hours after cooling, temperature after 45 minutes of reduction and 24 hours after cooling, rib eye area , thickness of subcutaneous fat, reduction and regional composition. The design adopted was the one allowed in the case, in which the results were submitted to variation analysis and to the effect of the inclusion levels of the papaya capsule in substitution for sorghum, the rate of regression analysis of 5%. A significant effect was found in the diet replacement levels (P <0.05) without cold carcass yield, weight loss due to cooling, rib eye area and weight per kg in weight. The 33,5% and 66,5% replacement levels of the papaya capsule with sorghum in the silage show better results in the carcass quality of lambs.
