| dc.description.abstract | Com o crescimento industrial e avanço das inovações tecnológicas, o beneficiamento do pescado tem se tornado uma atividade cada vez mais importante. Este Trabalho teve como objetivo analisar a capacidade de retenção de água (CRA) e o ganho de peso pelo camarão marinho, Penaeus vannamei durante o seu processamento. Mais especificamente, avaliar a retenção de água e o ganho de peso pelo P. vannamei; analisar os efeitos da retenção de água sobre a temperatura e o pH no processo de beneficiamento e propor estratégias de otimização do processamento para melhorar a capacidade de reter água do camarão Penaeus vannamei. Os camarões foram selecionados e pesados antes e depois de cada tratamento. A água com gelo foi preparada em uma proporção de 1:1:1 de água, gelo e camarão. Os camarões foram imersos na água com gelo por períodos de 2, 4, 6 ou 8 horas, conforme o tratamento, usando recipientes circulares com capacidade de 5l. Após o tratamento, os camarões foram novamente pesados e a absorção de água foi calculada pela diferença entre o peso inicial e o peso final. Foram avaliados camarões em 3 condições diferentes: Inteiro, descabeçado (somente a cauda), e descascado. Foi utilizado tratamento controle, com somente camarão e gelo, também na proporção de 1:1. A partir do tratamento, camarão na condição inteiro, verificou-se aumento de peso, sendo o período de 8 horas, aquele com maior ganho de peso. Em relação ao tratamento controle, em 8 horas não foi observada elevação significativa de pH. A respeito da temperatura e na condição camarão inteiro, houve aumento, porém, as diferenças não foram significativas. Com referência ao peso, os valores de média ± desvio padrão do camarão na condição inteiro, mostraram resultados significativos. Em relação à temperatura (ºC) para o camarão na condição descabeçado, houve estabilidade e as diferenças médias não foram significativas. Em se tratando do camarão na condição descascado houve ganho de peso (g) e o maior ganho se deu em 2 horas. Quando se trata do pH, em relação ao camarão na condição descascado obteve-se um maior aumento em 4 e em 6 horas, com a maior elevação. As diferenças de pH não foram significativas entre os tratamentos e para o camarão na condição descascado (PUD), à temperatura manteve-se estável. Diante disso, apesar de não haver diferenças entre tratamentos, os tempos de 4 e 6 são os que tem mais potenciais para contribuir com a conservação do camarão quando não se tem a intenção de fazer o uso de aditivos durante o processamento. | |
| dc.description.abstract2 | With industrial growth and the advancement of technological innovations, fish processing has become an increasingly important activity. This work aimed to analyze the water retention capacity (WHC) and weight gain of marine shrimp, Penaeus vannamei, during processing. More specifically, evaluate water retention and weight gain by P. vannamei; analyze the effects of water retention on temperature and pH in the processing process and propose processing optimization strategies to improve the water retention capacity of the shrimp Penaeus vannamei. The shrimp were selected and weighed before and after each treatment. Ice water was prepared in a 1:1:1 ratio of water, ice and shrimp. The shrimp were immersed in ice water for periods of 2, 4, 6 or 8 hours, depending on the treatment, using circular containers with a capacity of 5 liters. After treatment, the shrimp were weighed again and water absorption was calculated as the difference between the initial weight and the final weight. Shrimp were evaluated in 3 different conditions: Whole, headless (tail only), and peeled. A control treatment was used, with only shrimp and ice, also in a 1:1 ratio. From the treatment, shrimp in the whole condition, there was an increase in weight, with the 8-hour period being the one with the greatest weight gain. In relation to the control treatment, no significant increase in pH was observed within 8 hours. Regarding temperature and in the whole shrimp condition, there was an increase, however, the differences were not significant. With reference to weight, the mean values ± standard deviation of the shrimp in the whole condition showed significant results. Regarding temperature (ºC) for shrimp in the headless condition, there was stability and the mean differences were not significant. In the case of shrimp in the peeled condition, there was a weight gain (g) and the greatest gain occurred in 2 hours. When it comes to pH, in relation to shrimp in the peeled condition, a greater increase was obtained in 4 and 6 hours, with the greatest increase. The differences in pH were not significant between treatments and for shrimp in the peeled condition (PUD), the temperature remained stable. Therefore, although there are no differences between treatments, times 4 and 6 have the most potential to contribute to the conservation of shrimp when there is no intention of using additives during processing. | |
